*Yields: 2 servings 

 

For the pancake: 

1 cup flour 

1/2 tsp salt 

1-1+1/2 Tbs oil 

1/4 cup water 

 

For the egg mixture: 

3 large eggs 

1/4 tsp salt 

2 stalks green onion

2 Tbs water 

olive oil for cooking 

 

Begin by preparing the panacake mixture. Mix flour with salt, then add the oil & water. Knead dough into a ball. Divide dough in half. Roll each piece into a 10-12" circle. 

 

In a separate bowl, combine eggs, salt, water & chopped green onion. 

 

Heat oil in a pan on medium high, add 1/2 egg mixture (about 1/2 cup) and cook no longer than 30 seconds. Cover egg mixture with 1 piece of the dough. Cook for 30 seconds or until egg appears to be set. Flip pancake over and cook 1 more minute. Fold into thirds and cut into 3-4 large pieces. Repeat with remaining egg & dough mixtures.
