|recipe inspired by: 日日菜煮| 

 

1+1/2 cups hydrated black wood fungus mushrooms (木耳)

2-3 tsp sesame oil 

1-2 cloves garlic, minced 

1 green onion, sliced 

2-3 cups brown rice, cooked 

sea salt to taste 

cracked black pepper to taste 

olive oil for cooking 

 

Place the wood ear fungus mushrooms in a small bowl and pour boiling hot water over them. Allow them to sit for ten minutes until you prepare your other ingredients. 

 

Once the mushrooms have hydrated, rinse and drain. Chop the mushrooms. Heat a pan with olive oil, adding fresh garlic to the pan. Add the mushrooms, with sea salt, and black pepper. Stir in the sesame oil. Sautee for a few minutes over medium-high heat. Prepare a bowl with the fresh brown rice. Pour the mushroom mixture atop the brown rice, decorating the green onions across the mushrooms. Add more sesame oil as necessary. Serve warm. 

 

 

{Sesame Black Wood Fungus 木耳 Rice} 

{Couscous Quinoa 'Fried Rice'}

(Serves 2) 

 

*the key to cooking a good fried rice is by dicing up your veggies small

 

1+ 1/2 cups cooked couscous

 3/4 cup cooked quinoa 

1 stalk of celery, chopped

1/4 cup carrots, chopped 

1/4 cup green beans/yellow beans, chopped 

1/2 cup bean sprouts 

1-2 green onions chopped in large pieces

1 egg 

a little water 

sea salt 

oil for cooking 

soy sauce

oyster sauce

 

Heat a skillet pan on high, with about an 1" of water in it. Bring to a boil, and add in the vegetables (excluding the bean sprouts). Allow the veggies to cook. Drain, and set aside.

 

In a separate bowl, beat one egg, and add 1 Tbs of water, continue to beat. Set aside, and heat a wok or skillet. Coat with oil. Add the egg mixture, and allow it to set in the pan for 15-20 seconds,or until the edges begin to form away from the pan. Flip the egg, and allow it to cook for 15-20 seconds (doesn't need to be completely cooked, we will be cooking it again). Set aside in a separate bowl.

 

Rinse pan, and dry thoroughly. Coat the pan with oil (very much, enough to touch all parts of the pan). Add the couscous and quinoa. Stir constantly, and add just a little bit of water when the pan becomes dry. Add in the vegetables (excluding the bean sprouts). Allow to cook for a few minutes. Add 1 Tbs. soy sauce and mix together. Add 1 Tbs. of oyster sauce, and mix. Grind just a bit of sea salt over the mixture. Next,  add the egg "omelet" into the center of the pan, laid on top of the couscous. Using a spatula, or your mixing spoon, crush up the egg and mix into the couscous fried rice.  Add the bean sprouts at this time, and mix together for 30 seconds. Top with green onion, and remove from stove within 30 seconds. & your fried rice is done! Serve warm.

*tip: dice the veggies very small

 

2 eggs

2 cups white rice (cooked is 4, must be already made, "old rice" don't use freshly made rice, it will be too moist)

1/4 cup re-hydrated shiitake mushrooms 

1/4 cup chopped carrots 

1-2 green onions, chopped 

1/2-3/4 cup diced bell peppers 

1/4 cup chopped fresh green beans

 any other veggies you would like to include

 olive oil

1/4 tsp. salt 

2 Tbs. oyster sauce 

2 Tbs. soy sauce

 

Heat a skillet pan on high, with 1" of water in it. Bring to a boil, and add in the vegetables. Allow the veggies to cook. Drain, and set aside.

 

In a separate bowl, beat two eggs together and add 1 Tbs. of water and mix together. Heat pan again, and coat the entire pan with oil. Add the two beaten eggs to the pan on the stove. Allow to set for 30 seconds to 1 minute, enough that the edges of the egg begin to cook. Flip egg, as to create an "omelet" form. Remove from stove, and set aside in a bowl.

 

Add shiitake mushrooms to the skillet pan, and add just a dash of water, to create moisture for them to cook. Add 1/4 tsp. of salt to the mushrooms. Stir mushrooms, and allow to cook. Remove mushrooms from pan and set aside.

 

Coat pan with oil and put in the white rice. Allow to cook for a few minutes. Add the soy sauce and mix together. After, you can add the vegetables, and then the mushrooms. Mix together. Add the egg "omelet" in the center, and use a wooden spoon to crush and separate throughout the rice mixture. Continue mixing the fried rice, add the oyster sauce, and continue stirring. Finally, add the green onion last. Serve. (one of the easiest meals, that serves a lot of people, is quick, healthy & makes a great load of leftovers!)
