1+3/4 cup all-purpose flour 

1/4 cup rolled oats 

2.5 heaping Tbs brown sugar 

2.5 heaping Tbs white sugar

1 Tbs baking powder 

1/4 tsp salt 

1/2 cup butter 

2/3 cup milk 

1/2 packed cup of regular Thompson raisins 

1/2 loosely packed cup golden raisins 

1 egg beaten 

1 tsp vanilla extract 

 

Egg wash: 

1 egg beaten

 

Preheat oven to 400 degrees. 

 

​Combine flour, sugars, baking powder & salt. Add in the butter, 1 egg, and vanilla extract. Stir until combined. Add the milk in gradually. The dough will become a bit dry & clumpy. Continue to mix, adding in the raisins, and kneading the dough a little with your hands. When completely moist and combined, beat the dough down into about 3/4-1" thick. Cut into slices with a pizza cutter, and place on parchment paper on a baking sheet. Make an egg wash over the tops of the scone by beating an egg and glazing the tops of each scone. This will allow the scone to brown lightly in the oven. Bake 15-20 minutes or until tops and bottoms have browned lightly.

{Vanilla Spiced Chai Dark

Chocolate-chip Scones}

*Yields 9 large scones 

 

2 cups all-purpose flour 

1+1/2 cup whole-wheat flour 

1 heaping tsp. baking powder 

1 tsp. salt 

1/2 cup butter

1 cup brewed chai tea (use 2 tea bags & 1 cup boiling water) 

1/3 cup pure maple syrup

1 Tbs flax meal 

1/3 cup brown sugar 

1 tsp apple cider vinegar 

2 tsp vanilla extract 

1 cup Ghirardelli 60% all-natural dark cocoa chips 

 

Preheat oven to 400 degrees. 

 

In a large bowl, combine the flours, baking powder & salt. Cut in the butter. Once tea is brewed (steep 5-7 minutes), pour into a separate bowl. Add the flax into the bowl of tea and allow to set 2-3 minutes. Place in the fride 10-15 minutes to cool. Add wet ingredients into dry ingredients and mix together with a spoon until fully combined. Fold in the chocolate chips. Set dough in the fridge for 30 minutes. 

 

Once dough is removed from the fridge, flatten the dough with your hands & cut into desired shapes. Place on parchment paper on a baking sheet. Bake 15-18 mnutes. Remove from oven and allow to cool on cooling racks.
