{Raw Peanut Butter Cookie Dough Truffles}

*makes 10-12 truffles 

 

1+1/2 cup pitted dates 

1/2 cup almonds 

1+1/2 Tbs PB (or another nut butter); also could increase or decrease to preference 

1 Tbs honey 

2 Tbs virgin coconut oil 

organic cocoa powder for dusting 

 

Begin by soaking dates and almonds together in warm water for five to ten minutes. Then, combine all ingredients together in a food processor. Scrape down the sides of the processor as necessary. Pour all of the cookie dough into a bowl, and cover with plastic wrap. Place in the fridge for 10 minutes. Remove from fridge, and form the dough into 10-12 individual balls. Roll each ball of dough in the cocoa powder, and set aside. To store, I lined tupperware with wax paper, and set the truffles in layers. Store in fridge for best results and a delicious, powerful nutty flavor.
